5 Minute Sandwiches

Quick yet delicious.  This is the theme for today’s post and no other dish can bring out such a compliment of flavors in this little of prep time than sandwiches.  Kiley and I wanted to enjoy the beautiful weather as much as we could in between all of the scattered thunderstorms we have been having in New England so we decided upon making sandwiches that utilized things we had in the fridge.

First thing is first: What do you like in your sandwiches?  Whenever I pack one to eat for lunch at work I am pretty boring.  I have bread, meat and cheese.  Nothing fancy, just a to-the-point kind of meal.  However, I won’t be doing this anymore.  I’m a fan of bread with oats, I think it is not only healthy for you but very filling as well, so after I get the bread out I put in between them some smoked turkey, fresh lettuce and tomatoes sprinkled with goat cheese.  You heard me, goat cheese.  If you’ve never had goat cheese before you are definitely missing out.  It has a sweet, smooth, rich flavor that pairs well with salads, fruits and vegetables or nuts.

You might be thinking to yourself: I don’t have goat cheese in my fridge, so what can I use instead?  Well, the best part of this recipe is that it is easily adaptable.  The day after Kiley and I ate lunch together I had the same sandwich as before, but I simply replaced the goat cheese with a couple of slices of white cheddar cheese.  Furthermore, while I had the sandwich mentioned in the section above Kiley had herself a roll with some smoked turkey, sliced avocado, sliced tomatoes, and goat cheese!  I have found that the key is to use any combination of bread, meat and an assortment of vegetables.  This is an easy way to eat more healthily while keeping you nice and full after having lunch.   Nothing ruins my day more than when I have a busy day planned and I eat an unfulfilling lunch; I get a bit hangry, if I may confess!  If you have kids or are on a time crunch before work this is a simple solution for lunch. 

If you are looking for a way to not have your average of the mill bread may I suggest to you day old bread.  I am very particular when it comes to expiration dates.  Even if my milk is one day past the expiration date I throw it away.  While I trust my nose to let me know if the milk is alright to drink I don’t even put myself in a position of gagging from the smell of spoiled milk, if you have smelled it before you know exactly what I mean.  This being said, day old bread is an easy way to get bagels and rolls at a discounted price, and best of all it is very easy to tell if it is bad.  At Stop & Shop you can get day old bread for about a 50% discount as opposed to buying it not day old, but here’s the kicker: the day old bread is 9/10 still fresh!  Check for yourself the next time you are out grocery shopping; simply press on the bread and if it is not hard as a rock and it looks like how it is supposed to you are in business!  After all, who doesn’t like a great savings?

Bread with Oats

Smoked Deli Turkey

Tomato, sliced

Lettuce

Goat Cheese (or replace with White Cheddar Cheese)

Bread Roll

Smoked Deli Turkey

Tomato, sliced

Avocado

Goat Cheese

 

Directions

1. Take out two slices of bread.

2. Place a slice of smoked deli turkey on each slice of bread

3. Place a slice of lettuce on each pieace of turkey.

4. Place a slice of tomato on each piece of lettuce.

5. Sprinkle some goat cheese on the slices of tomatoes.

6. Put one half of the sandwich on the other to make it whole.

7. Serve & Enjoy!
