Baked Eggs

Efrain here-  If you're like me and love eating eggs, but you find yourself making eggs the same old way every time take out a pen and paper (or Pin this!) and get ready to write this recipe!  To be quite honest, I never even heard of baking an egg until I came across how to do it.  It's so simple I didn't think it would taste any good.  Granted, eggs are simple to make if you fry them, but I'm the kind of person who needs help making scrambled eggs...

But thats what the cooking process is all about right?  Live and learn; cook and fail, but learn from your mistakes, after all every mistake makes for a funny story...at least after enough time has passed!  What I like best about this recipe is that you can make it as easy or complicated as you want it.

If you find omeletts to be too difficult to make this can be an easy alternative as you can add all your favorite veggies to this egg dish with the ease of mind that it WILL taste good, unless you burn down your kitchen in the process...YIKES!  All jokes aside, click on the read more and have yourself a good breakfast!

Baked Eggs

 

 

Ingredients

 

2 eggs

1/4 cup diced red peppers

1/8 cup diced yellow peppers

1/8 cup onion, diced

1/2 teaspoon oregano

1/2 teaspoon red pepper flakes

2 teaspoons olive oil

Shredded Pepper Jack cheese, about 1/2 ounce

 

Directions

 

1. Preheat the oven to 350 degrees F.

2. Crack each egg into a small ramekin and put them into the oven on a middle rack.

3. While eggs are baking, put the olive oil in the skillet over medium heat and add the vegetables, cooking until onions are translucent and the peppers have slightly browned from cooking.  

4. After the egg has been in the oven for 6 minutes, take it out and add the vegetables and spices, dividing evenly between the two ramekins

5. Carefully place the eggs back into the oven and cook for another 6-8 minutes or until eggs are cooked through (one way to test this is to stick a fork into the egg, and if it comes out clean then it is cooked).

6. Serve and enjoy!

 

Personal Notes

-If you want more of a meal add two eggs to each ramekin (if you are watching your cholesterol- after taking the egg out of the oven the first time remove one of the yolks before adding the vegetables)

-Add red pepper flakes for a little bit of a kick!
