Brownie and Cookie Ice Cream Sandwiches

Two favorite ice cream flavors layered with brownies and cookies- the best way to combine two desserts in one to make a simple but amazing treat!

I hope you have been enjoying Ice Cream Week as much as I have!  We have seen 4 different and delicious flavors that covered the basics to summer time specialties- Hard Style Chocolate, Raspberry Sorbet, Mint Chocolate Chip and Strawberry!  Now it is time to share a way that you can use these ice creams, if you haven’t already finished them off ;)  By the time I was able to make the brownies and cookies for this treat, my family and I had already polished off the Raspberry Sorbet and Mint Chocolate Chip, but I know that those would have been amazing in these ice cream sandwiches as well!

The ice cream combined with both brownie and cookie made an amazing combination- I used coconut chocolate chip cookies and regular brownies for these sandwiches.  My personal favorite sandwich was a tie between the strawberry filled brownie and strawberry filled cookie sandwiches.  I really do love the strawberry ice cream!  Both ice creams deliver smooth and creamy goodness that is between decadent brownies and cookies.  You can use any brownie or cookie you like; I happened to have these ones on hand. 

If you wanted to go really wild, you could do one layer of the sandwich as a brownie and one layer as a cookie for a triple treat threat!  I was satisfied with having only one or the other, but I know using a combination would be delicious as well!  Or, you can do what I did- cut some of the brownies into smaller squares and make some of the cookies a bit smaller, and then you can have one of each.  Because smaller portions means you can have a little more, right? :)

Now, let me go on a bit about what makes these sandwiches so amazing.  There are way too many things to let you know about, so here are the top three. 

One- These are so easy to make!  Seriously, all you need is ice cream, brownies, and cookies.  If you want, you can even use store-bought cookies or brownies.  I will be sharing the recipe for the coconut chocolate chip cookies next week though, so be sure to come back for that!

Two- These are great as a make-ahead dessert.  You can make them one day and then keep them pre-made in the freezer for up to a week!  Easy-peasy for when you have unexpected company or want a quick treat to enjoy in the summer.  Put in a little work now, enjoy it for days to come!  Now that is my kind of treat.

Three- You can make however many or few as you want!  The extra brownies/cookies/ice cream can all be kept in the freezer until you need to use them, so that this can be prepared whenever you want!

Brownie and Cookie Ice Cream Sandwiches

Ingredients:

Brownies, cut into small squares (how ever many you want)

Cookies (how ever many you want)
Easy strawberry ice cream

Hard style chocolate ice cream

 

Directions:

Let the chocolate ice cream sit out for several minutes while you cut the brownies and get the cookies ready.

Use a spoon to put 3-5 tablespoons of ice cream into one cookie or brownie; use enough ice cream to create as thick or thin a layer as you want.  Top with another cookie or brownie.

Enjoy immediately or store in freezer in an airtight container for up to one week.
