Double Chocolate Chip Cookie Bars

White chocolate chips, chocolate chips, sprinkles and more come together in this easy cookie bar recipe that only takes minutes to prepare!

Hey everyone!  Efrain and I just got back from a week vacation to Myrtle Beach, which is why we haven’t posted for a week.   It was an oversight on our part- we meant to put something up explaining our absence.  But from here on out we will consistently be posting recipes three times a week for you to check out! :)  We will be giving you an update on our trip soon, but while we get that ready for you check out these Double Chocolate Chip Cookie Bars!  Whether you need something to bring with you as a treat on vacation or if you just want something to enjoy during the week, this is the perfect cookie bar for any occasion!

 

I don’t know about you, but I love an easy recipe.  I was craving something that used both white chocolate and chocolate, and I have had the idea of a cookie bar for awhile now.  My original plans were to cover the entire side of each bar with chocolate, but my family liked them so much as they were, plain, that I decided to only drizzle white chocolate on a few.  That is part of the beauty of these bars- you can dress them up or leave them simple; whichever way you choose these will be great!  Don’t like the nuts?  Leave them out.  Want more chocolate?  Add more chips or drizzle more chocolate on top.  Get personal with these, and have fun!  I do recommend the sprinkles though, because they are just so fun! :)

I made these before going on vacation, and kept the majority of them in the freezer.  They still taste great, although you need to let them thaw first before eating straight from the freezer.  Trust me, you do not want to try and bite into one frozen- they are hard!  Some of these goodies are going to stay frozen until Efrain and I move back in to school (just over 1 week!!) so that our friends can enjoy them too.  Don’t you just love a recipe that you can make ahead of time?  I sure do!  These Double Chocolate Chip Cookie Bars are an ideal thing to have as school starts up again- bake once, and be able to give kids a snack for weeks.  Or at least one week, while you taste test to make sure there is ‘no freezer damage’, right? ;)

 

Double Chocolate Chip Cookie Bars

Ingredients:

 

2 cups all-purpose flour

½ teaspoon baking soda

½ teaspoon salt

2 teaspoons cornstarch

¾ cup (1 ½ sticks) unsalted butter, melted

1 cup packed light brown sugar

½ cup white sugar

1 tablespoon vanilla extract

1 large egg

1 large egg yolk

½ cup chocolate chips

½ cup white chocolate chips

½ cup walnut pieces

1/4-1/3 cup sprinkles

Preheat the oven to 375 degrees F, and line a jelly roll pan (or cookie sheet with at least ¼ inch lip) with parchment paper.

In a medium bowl, whisk together the flour, baking soda, salt and cornstarch.  Set this aside.

In a large bowl, cream together the melted butter, white sugar and then the brown sugar.  Beat in the vanilla, egg and egg yolk until the mixture is light and creamy.

Mix the dry ingredients into the wet ingredients in 2 additions until everything is just blended- you still want to see a few flour streaks in the dough.

Stir in the chocolate chips, white chocolate chips, walnuts and sprinkles by hand using a wooden spoon or rubber spatula.  Mix until everything is well incorporated.

Spoon the cookie dough into the pan and press into an even layer.

Bake for 20-25 minutes, until the cookie dough is lightly browned on top and does not immediately give way when lightly pressed.  The cookie bar will continue to bake a bit as it sits in the pan while cooling.
