Easy Mini Brownie Bites

Simple treats are the best, in my opinion.  Ones that are easy to prepare yet look fantastic, and can even be made ahead?  Those treats are the ones that are great for those last minute occasions when you need to bring a treat and want it to look as good as it tastes.  For this kind of treat, I bring you Easy Mini Brownie Bites!

Now, don't be fooled by their appearance that these are difficult or you need special skills- in fact, all you need is a few ingredients and a little bit of time and you can make these mini treats!  They are chocolatey, slightly fudgy as a good brownie should be, and incredibly addictive!  We brought these over to some friends and they did not last long at all.  The only issue with these is that you can't help yourself from grabbing another one!  But they are small, so it's okay, right?  It is in my book :)

To me, simple treats are the best.  And these are super simple!  "Delicious little bites of heaven" is how one of our friends describe them- she loved how quick they are and with them being so small, you really don't feel guilty about having one..or ten!  I may or may not have needed to 'test-taste' several of these while photographing them, just to make sure they taste good for you of course.  The convenience of these is a great aspect of them and what makes them so easy!

All you need to do is prepare a batch of brownies (you can do homemade, or a mix) and bake them in thin layers.  For this, you do not want the thick layers of brownie you usually make.  Once the brownies are baked and cooled, you simply cut them into small squares (or any shape you like) and freeze them.  I left mine in the freezer for several days, until I got the time to be able to finish them.  Next, you get some almond bark (melting chocolate) and white chocolate almond bark, and get them nice and melted.  Then, its time to dip them with a fork and let them dry on some wax paper.

As they are drying, drizzle some of the white chocolate over the brownie bites to give them a little extra pizazz, and you're almost done!  They need to dry for a few minutes, and then you can commence stuffing them into your face :)  Or, you can share them.  You probably should, they are dangerously addictive!  What's great is that these can be made one step at a time, so if you need to freeze the brownies for awhile you can- up to 3 months if you need to.  Want to really see how easy they are?  The recipe below gives you all the information on how to make these delectable delights~

Easy Mini Brownie Bites

 

Ingredients:

1 box mix brownies, or homemade recipe

Chocolate almond bark (melting chocolate)

White almond bark (melting white chocolate)

 

Directions:

1. Preheat the oven to whatever temperature necessary for the box mix or recipe directions.  Line a 9x13 pan with foil, and grease with shortening, butter, or oil.

2. Prepare the brownie batter according to mix or recipe directions.

3. Pour the brownie batter into the pan.  Bake according to package or recipe directions.

4. Let brownies cool, and then remove from pan and cut into small squares or rectangles, about 1/2 inch by 1/2 inch.  Freeze these brownie bites for at least 1/2 hour, or until ready to finish them (up to 3 months).

 

5. Melt the chocolate and white chocolate in separate bowls or shallow dishes.

6. Put 2-3 brownie bites into the chocolate and use a spoon to spread the chocolate all over the bite.  Using a fork, lift the brownie bite out of the chocolate and place it on a piece of wax paper.

7. Let the brownie bites dry for a minute, then use a spoon to drizzle the white chocolate over the brownie bites.  If you want the white chocolate to appear to be more blended, drizzle them immediately while the chocolate is still wet.  You can cover multiple brownie bite batches before drizzling with the white to make it a quicker process.

8. Let dry for at least 10 minutes, and then enjoy!
