Speghetti Squash

Turn pasta night into something more with this

stringy, moist and nutritious alternative!

 

Pasta night has become a bit of tradition at my place.  In fact, aside from rice the only other grain that I mainly eat is pasta.  However, nothing makes a meal taste more boring than having it over, and over, and over…and over.  That being said, Kiley made spaghetti squash last year and it was phenomenal!  Having spaghetti squash instead of the usual pasta made all the difference, and I still remember it today.  There is something about the squash that cannot be explained; perhaps, it is the flavor that only squash can bring. Whatever the case, it inspired me to make spaghetti squash myself this time, and show you how to as well!

Step 1: Buy a spaghetti squash and place it on a baking tray.

Step 2: Cut the spaghetti squash in half.  It is okay if it is not perfectly symmetrical.  Also, it will take a bit of elbow grease to cut the spaghetti squash in half, so do not be afraid to really go for it (it might help to use a large knife).

Step 3: Scrape out all of the insides (as shown above).

Step 4: After pre-heating the oven to 375 degrees, place the split spaghetti squash in the oven and bake for 30-45 minutes; this is to soften the squash (the squash should look like the picture above).  Season with salt and pepper, if desired, before baking.

Step 5: With a fork scrap out the insides.  The scraps will look like strings of spaghetti (hence the name!).  Do not forget to scrape the sides.

Feel free to eat right away or store for later.  One half of the spaghetti squash can fill a 3 cup Pyrex container.  To eat again after storing simply reheat in the microwave.
