Want a dish that engages your guests at your next dinner party?  Looking to get your kids involved in making dinner?  This dish is not only tasty, but also very fun to make.  I was more interested in making them as I was eating them.  This is one food my mom would not mind me playing with!  After all, nobody ever said no to playing with food when it results in the other person getting to eat something yummy!

Just another normal night, but today’s post is not just of another normal dish.  That’s right, today we are talking about spring rolls!  Growing up whenever my family ordered Chinese food I always got rice with pork, beef and broccoli, chicken fingers and crab rangoons.  My mom was more of a teriyaki and egg roll kind of gal.  I hated egg rolls.  Why?  Well, they just didn’t taste good!  However, I now know that one needs to try a new food seven times before one can really judge whether or not he really likes it.  So, I tried them over and over again throughout the years and I still do not like them.  What I do like however, very much so I might add, are spring rolls!

Spring Rolls

Chinese food: Easy to eat, but seems very hard to make.  There’s something about Chinese food that seems very difficult to replicate.  Whether it is the MSG or a particular way the food is cooked I was always a bit dissuaded from tackling the holy grail of would be leftovers.  Despite all discretions I decided to take the plunge and try my hand at spring rolls.  Having made sushi late last school year with Kiley I was hoping spring rolls would be easier to manage- They are!

Only using five ingredients this dish could not be any easier to make: The carrots, brussel sprouts, cilantro and rice paper are all bought and used as is; the chicken is the only ingredient that needs to be cooked.  After the chicken is cooked all that needs to be done is to put everything in the rice paper as if you are making a mini burrito (I’m also a big fan of Mexican food!).  Aside from the chicken cooking the spring rolls take as long as it takes to roll them up, which is a solid thirty seconds per roll.

The fresh cilantro and brussel sprouts give these spring rolls an earthy taste; the carrots provide a nice fresh and crisp crunch.  If you are not a fan of chicken, or meat, you can substitute the chicken and cilantro for shrimp and avocado.  Being a huge fan of shrimp and avocado I sure would not mind having spring rolls no matter how they are made.  So what are you waiting for?  Let's get cooking~

 

Spring Rolls

 

Ingredients

Carrots, shredded

Brussel sprouts

Cilantro, chopped

Rice Paper

Chicken, cooked and chopped

 

Directions

1. Cook chicken and then chop up into small pieces.

2. Take out a handful of carrots, bruseel sprouts and cilantro.  Place on a side dish.

3.  On a plate, or cutting board, place one piece of rice paper.  Take a damp cloth and splotch the rice paper until completely damp.

4. While the rice paper is still damp place a small amount of the carrots, Brussel sprouts, cilantro and chicken in the middle of the rice paper.

5.  Take the bottom of the rice paper and up making a half moon shape; take the sides and fold towards the middle; roll the spring roll upwards until no more rice paper is left to be rolled.

6. Allow to dry and serve!

-It is important to fold the rice paper soon after making damp or else the rice paper will become sticky abd hard to manage.
