Bacon Wrapped Stuffed Jalapeño Poppers

Simple, easy, and an amazing appetizer or pre-game snack, these Bacon Wrapped Stuffed Jalapeño Poppers will leave everyone wanting more!

Efrain and I have had the idea of making jalapeño poppers for a while now, and we finally did it!  We decided to make these without looking at any reference recipes, and we are so glad we did it this way.  All of our friends loved these, and want the recipe to make for Thanksgiving as an appetizer or side dish.  The great thing about these is that you can make these throughout the year, and right now you have more opportunities than ever to make these.  Thanksgiving, family parties, football game food, general dinner appetizers- whenever you want!  So don’t feel like you have to wait for a special event; these are perfect for something special or just a casual night in.

What could be a better way to start off the Wednesday before Thanksgiving than with bacon, cheese, and jalapeños?  I mean, maybe having everything already cooked for you for tomorrow and not having any stress for the meal.  But you can make these Bacon Wrapped Stuffed Jalapeños and stuff your face with them as a way to de-stress.  Or you can save them to make as an appetizer and still stuff your face with them.  In that case you might want to double or triple the recipe to be sure you have enough for everyone.

One note about the jalapeños- you want to be sure to handle these bad boys very carefully because they are spicy little peppers!  You can make them more or less spicy if you know that the people eating them can handle the heat.  When you cut the jalapeños, you can either make sure to wash your hands frequently or wear gloves to prevent any jalapeño juices from getting on you.  Trust me, if you have any small hand cuts it could be very uncomfortable to wash any dishes later on that day.  So I would suggest wearing gloves, it is probably quite safer.  Cut the tops off of the jalapeños and then cut each one lengthwise.

After each jalapeño has been cut, use the knife to carefully cut out the pith of the jalapeño and then  use a spoon to scrape out all of the seeds and as much of the pith as possible.  If you want the poppers to be spicier, leave in some of the pith as this is where the spiciness comes from in the jalapeño.  We washed each jalapeño half after we de-seeded it to make sure that all of the seeds were out of the halves.  You could also take some of these seeds and use them in the filling if you really wanted to ensure that they are spicy.  At this point, your jalapeños are ready to be filled with the delicious cream cheese filling!  Stuff them, wrap ‘em up in bacon, bake and enjoy!

Bacon Wrapped Stuffed Jalapeño Poppers

Ingredients:

7 jalapeños

3 ounces cream cheese, softened

1/4 teaspoon cayenne pepper

1/8 teaspoon ground pepper

Pinch of salt

1/4 cup cheddar cheese, shredded

1/4 cup Colby Monterey Jack cheese. shredded

7 slices of bacon, uncooked

Directions:

Preheat the oven to 400 degrees F, and line a baking sheet with aluminum foil.

Cut each jalapeño in half lengthwise, and remove the pith and seeds.  Try to remove as much of the pith as possible, as this is where the heat from the jalapeño comes from and can make some of the poppers unexpectedly spicier.  Make sure to wash your hands carefully

In a medium bowl, combine the cream cheese, cayenne pepper, ground pepper and salt.  Mix this until it looks like the spices are evenly distributed throughout the cream cheese.

Add in the cheddar and Colby Monterey Jack cheese to the cream cheese mixture and mix the cheese in.

Place the jalapeños on the baking sheet, and use a spoon to fill each jalapeño half with filling.  You want to fill them so they are not overflowing, but just to the top of the jalapeño shell.

Cut each strip of bacon in half, and then wrap each stuffed jalapeño half with the strip of bacon.

Place these on the baking sheet, and bake for 12-15 minutes, until the bacon is fully cooked.

Sprinkle additional shredded cheese on top if desired.
