Simple Cinnamon Bread

Soft and cinnamon-y, with pockets of extra cinnamon bursts and a delicious cinnamon-sugar crust that gives just enough crunch, this bread is a must-make!

I like things that are delicious and easy, though that is not really always the case in baking. Often times you need to make the dough/batter, let it sit or rise or refrigerate, or decorate, or prepare, or do lots of steps that require a lot of time. While this recipe does require one hour to let the dough sit, it is an hour that you can use to get other things done, like check out our Pinterest, like us on Facebook, or get some chores done.  I would personally suggest Pinterest :)

I am a self-proclaimed desserts lover: I mean seriously, check out all of these recipes! I think it’s a special treat when I can have something sweet in the morning, but still feel like it is a decent breakfast food as well. This Simple Cinnamon Bread is the perfect solution! You can eat this plain, with butter, toasted with butter; you can have it in the morning, as a mid-day snack, as part of a meal, or a midnight snack! The soft and soothing taste and texture of this bread makes it work wonderfully to eat at any point in the day.

The cinnamon-sugar crust on the top of the bread was my favorite part. It was not crispy and hard, but delicately crunchy and full of sweet cinnamon taste. I saved the top part of each slice of bread to eat last, because I loved the crust so much. In case you were wondering, I really love cinnamon-sugar combinations. Cinnamon and sugar is a flavor duo that Efrain and I love, and finding new ways to incorporate it into our daily food choices is always a plus!

Simple Cinnamon Bread

Ingredients:

3 cups all-purpose flour

½ cup granulated sugar

2 teaspoons instant yeast

*1 teaspoon cinnamon

1 teaspoon salt

1 cup (8 ounces) warm milk

¼ cup (1/2 stick) unsalted butter, melted

1 large egg

1 teaspoon baking powder

½-1 cup mini cinnamon chips

Topping:

3 tablespoons sugar

1 teaspoon ground cinnamon

Directions:

In a large bowl, whisk together the flour, sugar, yeast, 1 teaspoon of cinnamon and salt. In a separate bowl, whisk together the milk, butter and egg until combined.

Combine the wet and dry ingredients, mixing until it is smooth. More flour may be needed at this point if the dough does not come together smoothly.

Cover the dough and let it rest for one hour at room temperature. After an hour, preheat the oven to 350 degrees F, and grease an 8x4 or 9x5 loaf pan.

Stir the baking powder and the cinnamon chips into the dough until they are fully incorporated.In a small bowl, combine the cinnamon and sugar for the topping.

Spoon or place the dough into the greased pan, and sprinkle the cinnamon-sugar mixture over the dough. If you do not use all of the topping, that is fine; save it for when the bread is done baking.

Bake the bread for 35-40 minutes, until a toothpick inserted in the center comes out clean. Remove the bread from the oven, and let it rest in the pan for 5 minutes. Transfer the bread from the pan to a cooling rack to cool completely; it will slice better when cooled. If you have extra cinnamon-sugar topping, sprinkle it over the bread while it is still warm.

 

*If you only have active dry yeast, you can combine it with the warm milk and let it sit while you prepare the dry ingredients, and then prepare the recipe as directed.
