Best Pumpkin Pie

The classic Pumpkin Pie is easy to make, tastes great, and is the perfect recipe for the holidays and beginner pie makers!

Happy Wednesday!  What better way to start off a day than with a nice slice of pie?  Or, to make it even nicer, a whole pumpkin pie!  I know it has been awhile since we last posted, but I hope that seeing this pie helps to make up for it.  Things have been a bit hectic around here as of late, and Efrain and I are trying our best to keep things running smoothly.  We are still committed to this blog, and are working on getting things back on track.  Continue to check back because we are still posting new recipes every week!  We will definitely have a great new recipe for you on Friday :)

So, I have something to tell you.  This is the first pie I have ever made that is a real pie.  As in this is not a chocolate cream pie, but instead has a flakey buttery crust and a real baked pie filling.  Whaaaat?  Well, I am certainly happy that this was my first pie because it was a huge success!  The filling did not crack, the crust held together, and everything went smoothly.  This pie will not go runny on you; the filling is firm enough without being so soft it falls apart or so hard that it feels like you have to struggle to chew through it.  Pumpkin pie perfection.

Efrain and one of my roommates adore pumpkin pie, and were more than willing to test the pie for me.  Within a few days, between the two of them over half of the pie was gone.  Efrain had two pieces the first night!  He described the pie as having a strong pumpkin flavor, but not being overly pumpkin-y so as to drown out the rest of the spices.  Efrain went so far as to call it one of the top pumpkin pies he has ever had, which is saying a lot!  As soon as you try this pie, you will be able to say the same thing: Mmm, and can I have another slice!!

I have to admit, I was very nervous about making a pie.  I used a homemade crust, and it was a doozy to put together!  Making it, letting it chill in the fridge, rolling it, chilling it…it was not the pie crust recipe that I am looking for, so rather than share it today I would recommend using your own favorite recipe or using a store bought crust.  This crust, while yummy, involved a lot of hassle that I would not want you to deal with.  So please, use your favorite crust!  I hope that you will make this soon- give it a practice run before Thanksgiving so that you can enjoy pumpkin throughout the whole month of November!

Best Pumpkin Pie

Ingredients:

1 pie crust
2 eggs, slightly beaten

1 1/2 cups pumpkin puree

3/4 cup sugar

1 teaspoon cinnamon

1/2 teaspoon salt

1 1/2 teaspoons pumpkin pie spice

1 1/2 cups sweetened condensed milk

Directions:
Preheat the oven to 425 degrees F.  Prepare a 9 inch pie pan with a single layer of crust, crimping or pressing the edges together.

In a large bowl, mix all of the ingredients until no lumps remain and the mixture is smooth.

Pour the pie filling into the pie crust.

Bake at 425 degrees F for 15 minutes, then lower temperature to 350 degrees F and bake for an additional 45 minutes, or until a knife inserted into the center comes out clean.

Let cool, top with whipped cream, and enjoy!
