Funfetti Muffins

Light and simple, these Funfetti muffins deliver classic Funfetti flavor in an even easier to eat treat that you can have for breakfast!

You know those days?  The ones where you are just tired and want to be able to crawl into a nice and comforting bed and sleep through the morning?  Yeah, I do too.  I have mentioned previously that I work in a bakery; what I did not mention is that it involves getting up at 4:15 in the morning on the days when I work the morning shift-which is basically all of my shifts, 4 days a week.  Not so fun.  Don’t get me wrong, I genuinely do enjoy my job but it can be very physically (and mentally) draining.

Being up so early means that I go to bed usually by 8:15 the night before.  I have always been a morning person, so it is not an issue getting up in the morning.  The thing is, it does make it harder to get everything done, like writing up and posting a blog page.  If you have ever wondered why my posting times have been a bit off, it is usually because I need to make a few final edits once I am home from work.  Even though I may be tired, seeing bright and cheery photos like the ones of these muffins makes everything a bit better because after all, who doesn’t love sprinkles? :)

I know what you may be thinking- “Muffins?  How are these muffins?  Aren’t they just cupcakes?”  No, no these are not!  One of the main differences (in my opinion) between cupcakes and muffins is the texture.  Cupcakes have a cake consistency, a lighter texture with a smaller crumb.  Muffins on the other hand are a bit heartier, with a heavier texture.  When you bite into one, you can really tell if it is a muffin or a cupcake.  And also, muffins are healthy, right?  So if you can have something like cake for breakfast, you will be satisfying your sweet tooth early.  Or at least, that is what I am going to go with! ;)

Efrain has confused the two previously- he has called muffins cupcakes, and cupcakes muffins.  I sent him a picture of these, and he later said how the cupcakes kept making his mouth water.  To follow that up, he even said “What is a muffin but a naked cupcake”.  Don’t worry; before I had too much of a panic attack he let me know he was kidding.  Anyways, these really are yummy muffins!  They have some of the flavor of the traditional Funfetti cupcake, but they are definitely a real muffin instead.  The sprinkles are just the way to dress them up to be a party muffin.

Funfetti Muffins

Ingredients:
3/4 cup all-purpose flour
+ 2 tablespoons

1/4 cup granulated sugar

1/2 cup Funfetti mix

1 teaspoon baking powder

1/4 teaspoon salt

1 large egg

1 teaspoon vanilla

1/4 cup vanilla or plain yogurt

3 tablespoons milk

Extra sprinkles, optional

Directions:
Preheat the oven to 350 degrees F and line a 6-cup muffin tin with liners.  There will be enough batter left to make 2 mini mufifns; or you can make 7 regular-sized but less full muffins.

In a medium bowl, whisk together the flour, sugar, Funfetti mix, baking powder and salt.

In a large bowl, whisk together the egg, vanilla, yogurt and milk.  Pour the dry ingredients into the wet and stir just to combine.  Add in additional sprinkles if desired; up to 2 tablespoons.

Put the muffin batter into the lined muffin tins, filling each at least 3/4 full.

Bake for 18-22 minutes, until the tops are lightly golden brown and a toothpick inserted into the center of a muffin comes out clean.
