Never thought about making lemon brownies before?  Well, let me ask you this: What would you give for a little family time?  What about a good time spent with friends or a loved one?  Quality time is time worth spending in my book.  To my surprise my mother asked me to join her in making the brownies; by the time I turned off my computer, I was watching Criminal Minds (which is my favorite show as of late- thank you Netflix!), my parents were already well on their way!  I’m used to getting everything out from the fridge and cabinets and looking over every direction on the recipe, so it was nice for a change just to be given a bowl and told to mix.  After “arguing” about how many teaspoons were in a tablespoon (which is 3 by the way) the brownies were put in our temperamental oven.

Lemon: The most favorite of flavors by Kiley, whether or not she will admit it is another story.  On vacation we made lemon cookies, over the summer she made lemon cake and last semester lemon cookies were made.  That being said, we are all about lemon.  There is something about citrus that makes my eyes wide and my body awake just after the first bite.  The “pop” of citrus causes my mouth to water up the only way a tart flavor can.  However, not all lemon treats are tart, but luckily for me (I say this because tart is my favorite) this lemon brownie is a bit tart and packed full of flavor.

Lemony Brownies

Do you own an appliance that works, not the usual way that anyone could use it but rather in a “if you do this, squint your eye and hold your breath” kind of way.  Well, I have one of the appliances: the oven.  Sometimes it likes to heat everything evenly; sometimes half of the oven is 15 degrees hotter and other times 15 degrees cooler.  So, whenever I try baking anything I always have to take out and rearrange the baking dish, or tray, because I don’t want burned food!  Occasionally, I really want to try something so I’ll have a burned piece of food every once and again, but only if I think it’ll be really good.

 

Lemony Lemon Brownies

 

Ingredients

3/4 cup all-purpose flour {King Arthur All-Purpose Flour}

3/4 cup granulated sugar

1/4 teaspoon salt {Sea Salt}

1/2 cup (1 stick) unsalted butter, softened

2 large eggs

2 tablespoons lemon zest

2 tablespoons lemon juice

For the tart lemon glaze:

4 tbsps lemon juice

8 tsps lemon zest

1 cup icing sugar

 

Directions

1. Preheat the oven to 350 degrees.

2. Grease an 8×8 inch baking dish with butter and set aside.

3. Zest and juice two lemons and set aside.

4. In the bowl of an electric mixture fitted with the paddle attachment, beat the flour, sugar, salt, and softened butter until combined.

5. In a separate bowl, whisk together the eggs, lemon zest, and lemon juice until combined.

6. Pour it into the flour mixture and beat for 2 mins at medium speed until smooth and creamy.

7. Pour into baking dish and bake for 23-25 mins, should turn golden around the edges.

8. Allow to cool completely before glazing. Do not overbake, or the bars will dry.

9. Filter the powdered sugar and whisk with lemon zest and juice.

10. Spread the glaze over the brownies with a rubber spatula and let glaze set.

11. Cut into bars and serve.
