Loaded Nachos

Loaded Nachos contain all of your favorite ingredients, and are ready in under 30 minutes- the perfect dinner, appetizer or game day food!

Food is best enjoyed when eaten with friends and family.  I believe this to be whole heartedly true and for this reason today’s post is all about Nachos.  Nachos are one of those unique foods that can be either an appetizer or an entrée, depending on how much you make and how hungry you are!  Restaurant nachos are alright, but I usually find there to be something lacking in them, so Kiley and I decided to make these ourselves to create the perfect nachos for us!  In fact, these were so good that we made them the next night for dinner as well, because you can never have too many nachos.

One of the things I (Kiley) love about nachos is their convenience.  You have something that needs to get used up, or something that you like in general?  Perfect for nachos!  You can load these up as much as you want, or keep them plain and simple.  Efrain and I like our nachos to have a good amount of toppings so that every chip gives your mouth a mini fiesta.  And with toppings like 3 kinds of cheese, salsa, ground beef, avocadoes, banana peppers, jalapeños and more you seriously cannot go wrong.  So dress these up or dress them down however you prefer them, as long as you enjoy them!

Crunchy, hot, spicy, cool and plentiful.  These are the perfect words to describe how I (Efrain) like my nachos.  I like the crunch that the chips provide; the heat I taste and feel when they are just taken out of the oven; the kick I get from the jalapenos, banana peppers and seasoned meat; the relief I get from the heat by scooping up some sour cream.  Best of all, I like that after I thought I could not take another bite I wind up doing so because with so many nachos made it would be a shame if it were to be thrown out and wasted!

So, let’s talk about the times you should be enjoying these delicious nachos.  As a dinner.  As an appetizer.  As a snack.  As a football game food.  Just because.  Right now.  Nachos fit in to so many occasions and are so easy to make, why aren’t you making them?

 

As much as Efrain and I like making fanciful dinners with special ingredients and preparations, that is really not practical and only happens like once a month.  Because real life happens instead, and dinners like this that are quick, fun, and easy to make tend to win out.  The hardest part of making these nachos?  Waiting for them to spend those few minutes in the oven.  That’s it, and then its yummy nachos in your happy tummy.

Question: How do you dress up your nachos?

Nachos

Ingredients:

1 large bag of tortilla chips

1/2 lbs of ground beef

1/2 cup Cheddar cheese (pre-shredded)
1/2 cup Mexican 4 cheese (pre-shredded)

1/2 cup Colby Monterey Jack cheese (pre-shredded)

~15 jalapenos

~15 banana peppers

1 avacado, mixed

Scoops of sour cream

Directions:

1. Cook ground beef completely through.

2. Cover bottom of baking pan with tortilla chips.

3. Place cooked ground beef, cheese, jalapenos and banana peppers; lightly cover with tortilla chips

4. Put baking pan in oven for 6-8 minutes.

5. After the cheese is melted put scoops of avacado and sour cream on top.

6. Enjoy!
