This recipe is going to become a staple recipe in the book for years to come. The peanut butter does not over power the ice cream; it gives a whole new dimension to how you can enjoy peanut butter and ice cream at the same time.

Peanut Butter Chocolate

Covered Pretzel Ice Cream

I believe that there is one main ‘in-love-need-it-now’ appreciation for food. This is when you have a bite and everything else seems to slow down- you savor the moment and want the taste to linger for as long as it can. You take your time with the food and when it is gone, you wish you had more. This was the case for me when I had this ice cream drizzled with the caramel. In fact, after I put my dishes in the sink I got another spoon and snuck one more bite from the freezer. This ice cream is that good.

The ice cream is speckled with chopped chocolate covered pretzel pieces, providing a slightly crunchy contrast between the smoothness of the ice cream and the bite of the pretzel. The caramel drizzled on top adds a just sweet enough flavor to the ice cream that takes it over the top. The hot fudge is not obvious overall, but it adds an underlying dimension to the taste, helping keep the peanut butter from overwhelming everything.

Peanut Butter Chocolate Covered Pretzel Ice Cream

 

Ingredients:

3/4 cup smooth peanut butter

3/4 cup plus 2 tablespoons granulated sugar

2 2/3 cup half and half, milk, heavy cream, or combination

1/8 teaspoon vanilla extract

Pinch of salt

10-15 chocolate covered pretzels, cut into small (think pea-sized) pieces

3-5 tablespoons hot fudge

Caramel or chocolate sauce, optional for serving

 

Directions:

1) In a large bowl, combine all of the ingredients except the chocolate covered pretzels and hot fudge. 

2) Mix using a handheld or stand mixer until everything looks well combined and there are no chunks of peanut butter left. *Alternatively, you can puree the ingredients together rather than use a mixer.

3) Chill the mixture until it is thoroughly chilled; at least 1 1/2 hours.

4) Freeze the mixture in an ice cream maker according to machine instructions.  While the machine is mixing the ice cream, spoon the hot fudge into the opening and let it mix with the rest of the ice cream.

5) When the ice cream is finished, take it out of the machine and mix in the chopped chocolate covered pretzels.

6) Serve immediately for soft-serve style ice cream, or put it in the freezer for it can harden.

Notes:

This ice cream can be stored in the freezer in an airtight container for up to 3 months.
