You know the saying "Beauty is in the eye of the beholder"?  Well, the beauty about this dish is that it's simple and tasty.  I'm all for pulling out all the stops when it comes to food, but occasionally I'm all for the simple the things in life.  So, if you  find yourself either pressed for time or not willing to commit extra time and energy to make that one of a kind dish remember to take a deep breath, take out those "leftover" ingredients and enjoy yourself something simple.

Originally inspired by Korean bibimbap as well as a classic from my childhood, I wanted to make a meal that had the goodness of having an egg on top; I wanted that yolk goodness mixed with rice!  I remember having this as a kid and while I don't like my yolk as runny as I remember, I did find myself satisfying a serious nastalgia craving.

Being the college students that we are, sometimes a recipe is needed to be made that incorporates "leftover" ingredients.  You know, a meal that uses that one can of beans that you're never going to use just by themselves.  I've decided to "unofficially" coin the meal PEG & Poultry- Plant, Egg, Grain and Poultry.  After all, what could be better!

Ingredients

1 cup uncooked rice

1 chicken breast

1 carrot, chopped

1 stick celery, chopped

Half an onion, chopped

1 tablespoon olive oil

2 eggs

 

Directions

1. Bring 2 cups of water to a boil and then add the rice.  Cook on medium heat for ~25 minutes or until the water is mostly evaporated.

2. As the rice is cooking chop up the carrot, celery and onion.

3. Set a pan over medium heat with 1 tablespoon of olive oil.  As the pan is heating up cut the chicken breast into small bite size pieces.

4. Add the chicken to the pan and cook until the outside is cooked.  Then add the carrots and celery and set over medium low heat with the pan covered for ~10 mins, or until the chicken is cooked through and vegetables are at deesired softness.

5. Cook two eggs over easy (on both sides, but with the yolk intact and a bit runny).

6. Serve and enjoy!

 

Personal Notes

-If you want more of a kick add red pepper flakes to the chicken and vegetable.
