Piña Coladas

A cool and refreshing twist on the classic pineapple and coconut Piña Colada.  You are going to love this simple change that makes a world of difference!

Do you like piña coladas?  Do you like dancing in the rain?  But seriously, today’s post features the quintessential drink: piña coladas.  From its refreshing, cool taste to the nice tang the pineapple leaves in your throat, this drink is a classic that everyone loves.  Whether you prefer yours alcoholic or virgin, no one can resist the island favorites that are coconut and pineapple.  And the best part is, we are going to tell you how to make both versions, so that the kids can enjoy these too!

This is the first ever post that both Efrain and I are writing up together, because we both love this recipe and couldn’t decide who should get the honor of posting the recipe.  We have made this recipe both virgin and alcoholic, and it tastes great both ways.  For the alcoholic version, you will find a slight twist on the traditional recipe.

In this recipe, the Malibu cuts the acidity of the pineapple while the Pinnacle Whipped kept the drink from being too either too coconutty or too pineappley, and gave it a different kind of sweetness.  I really liked that the Whipped made the drink have another dimension that it normally does not have.  When you try it, you will understand too!

This was one of Kiley’s first drinks and the minute she had it I knew she was in love!  She wasn’t sure what kinds of drinks she would like, and to this day she still does not fully know, but she knows now that this one is definitely a “go-to”.  I’ve never met anyone that does not enjoy a fruity beverage, aside from my parents, but even the people that do not like fruity beverages all the time have to admit that they like to indulge in one every once and a while.

Piña Coladas

 

Ingredients

 

 

12oz pinapple juice

4oz cream of coconut

1 cup pinapple spears

4.5oz Malibu rum

1.5oz Pinnacle Whipped

4 cups of ice

Directions

 

1. Measure all of the ingredients

2. Place all ingredients in the blender

3. Blend together on high for at least 30 seconds

4. Serve and enjoy!

One of the best things about this recipe is how simple and easy it is.  I mean, 5 ingredients and ice?  You can’t go wrong with that, especially because if you use the pineapple juice from the can of pineapple chunks, you only have to open that one container!  This is the perfect drink for an evening with friends, a girl’s night, or just a night when you want to feel like you are somewhere tropical for a while.  All you need is a measuring cup and a blender.  Easy peasy deliciousness in your glass in less than 5 minutes. 

 

I always equate piña coladas with vacation and vacation usually means expensive, but after making these myself I realized that when you take away the mark-ups that bars put on the prices for alcohol these are relatively cheap to make.  Best of all, making something that people not only like but think is expensive tends to impress; if you are making these just for yourself then be prepared to impress yourself…it can happen!
