Molasses Muffin Tops

Soft and easy Molasses Muffin Tops burst with molasses flavor and bits of cinnamon, and are the perfect start to a busy day or as a yummy snack- the best part of the muffin without all the work!

If you are like me, then your favorite part of the muffin is the top.  It is always the part that has the best flavor to me, and if there is a topping then this is the part where it is.  The thing is, I do not eat muffins quite like everyone else.  I break the muffin in half, removing the top from the bottom and then I eat the bottom first, saving the top for last.  After all, it is my favorite part!  Please don’t judge me?  Thanks :)  Efrain will eat the muffin whole (normally?) without separating the muffin in any way.  That is not for me though, I am too particular about eating my muffins.  Remember, this is a no-judgment blog here :)

Anyways, these are the kind of muffin tops that you can really enjoy.  Soft and easy to bite into, and all of the joy of a muffin top without the rest of the muffin!  The warm flavor of molasses is enhanced by the ground cinnamon and ginger also in the mix, and leaves a nice lingering molasses taste.

 

The ones with cinnamon chips have added little bursts of cinnamon flavor in every bite, and you can choose to add them only on top, in the batter, or not at all.  Whichever way you choose, it will be a delicious and easy muffin top.

One of my favorite things about muffin tops that I touched on above is that it is the best part of the muffin in an easy form.  This also ties in to another factor of muffin tops: easy transportation and easier to eat than a full muffin.  I can grab one of these before going on a run, and not feel like I am overeating.  Speaking of running, I am happy to say that I am back to running again!  I have mentioned it before briefly, but it is nice to say that I am fully committed to running again.

Efrain and I have been running for over a month, though last week I was sick and not able to run.  Right before that though, we had just recently hit a new milestone of running 3 1/2 miles!!  Guys, before this October I had never even run 2 miles before!  So yeah, I was pretty bummed when stopped running for a week.  But we are back to running again as of this week, and I am back up to 3 miles.  Now just to keep it up and continue working back to 3 1/2 and beyond.  But these muffin tops are a good motivation to do that, to get me out of bed in the morning before going on a run.

Molasses Muffin Tops

Ingredients:
1 1/2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1/2 teaspoon ground ginger

1/2 teaspoon ground cinnamon

1/2 cup + 2 tablespoons light brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1/4 cup (1/2 stick) unsalted butter, melted

1/4 cup milk

1/4 cup molasses

Cinnamon chips, optional and to taste

Directions:

Preheat the oven to 425 degrees F.  Grease a standard (12 hole) muffin top pan and set aside.

In a large bowl, whisk together the flour, baking powder, salt, ground ginger, ground cinnamon, and brown sugar.

Add in the egg, vanilla, melted butter, milk and molasses and stir to combine.  Stir everything until only small flour streaks remain.

Spoon the batter into the muffin top pan, about 2 1/2 to 3 tablespoons per hole.  Sprinkle with cinnamon chips if desired.

Bake for 5 minutes at 425 degrees F and then reduce temperature to 375 degrees F and bake for an additional 5 minutes.  Muffin tops should be firm to the touch and a toothpick inserted into the center should come out clean.

Remove muffin tops from the oven and let cool on a wire rack.
